01 / ABOUT THE PLACE

About this place

So delicate it appears almost translucent when held between fingertips, usubane is a hand-grilled okaki rice cracker as light as a feather. A crisp, dry snap yields instantly on the tongue, melting away to leave behind the refined aroma of soy sauce and the gentle sweetness of glutinous rice. Located near Kyoto's historic Shimabara Daimon gate, Hishiya has long drawn visitors in search of these singularly fragile crackers.

The signature usubane requires roughly 2 weeks of meticulous effort from initial dough preparation through to the final bake. Toasting such paper-thin dough evenly over heat without scorching demands practiced artisanal touch, yielding a texture so fragile it threatens to crumble under the slightest pressure. It is a confection meant to be savored with care, prompting customers to carry it home gently when buying packages as souvenirs.

The counter features more than just usubane, showcasing an assortment of arare and okaki in varying thicknesses and seasonings. Hagoromo is slightly thicker than usubane, delivering a firmer crunch and more pronounced savoriness, while the square kinkaku and ginkaku allow the natural flavor of the rice to shine. Other selections, such as mibuyaki and tayu arare, are equally favored for their unpretentious, rustic character.

Located in Yakuencho in Shimokyo Ward, the shop maintains a quiet, understated storefront that makes for an easy stop while exploring the Shimabara district. Payment is cash only, so having small bills or coins on hand helps ensure a smooth purchase.
